I am new to the comic industry and dont fully understand why Chew by Image comics has had the price go up so much in the last 8 weeks. Makes me wish I bought about 5 copies when #1 came out. And next week Image is coming out with the 4th print for #1. Is the price way up due to not alot of copies being made?

Chew's constant price increase is a case of supply versus demand. The original print run was small. Combine this with its popularity (I don't know if its good, but many people like it) and a certain amount of speculation on the book. Almost immediately after this book hit, people began referring to it as "the next Walking Dead". Walking Dead has gained steadily since its release, so some people purchased this book with the hopes of turning a profit in the short or long run.
So the initial print run sells out, people start talking, and boom the hype mill starts. The market starts chasing its own tail and boom, you have a book that is severely inflated on the back issue market.

"Supply and Demand" is the basic explanation of why this is happening. If you want to know how it got this way in the first place then you may put it down to the fact it has an original concept and is quite well written and entertaining to read. The customer response from the release of this comic would suggest that these are the things people value in a comic book and that maybe becoming harding to find these days.
